This past weekend we had tons of fun with all of the Fall festivities that were going on! We carved pumpkins, painted pumpkins, went on a hay ride and even went trick or treating on Halloween. One thing in common with all the festivities is that there are plenty pumpkins around.
Pumpkins are very versatile!
You can decorate with them, do learning activities with them, they make for wonderful Fall pictures to add to your scrapbook, and you can eat them which is one of my favorite things to do with them. Pumpkin is even a flu-fighting food with several health & nutritional benefits.
So today I have a fantastic pumpkin bread recipe that is “nutritious and delicious.” I have been saying those two words a lot lately to my daughter and it is super cute to hear her say it.
Ingredients:
3 cups whole wheat flour
2/3 cup sucanat
1/4 cup agave nectar maple syrup, we NO longer use agave nectar
1 can of pumpkin
1/2 cup pureed sweet potato
1/3 cup coconut oil
3 eggs
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 teaspoons cinnamon
1 teaspoon allspice
2/3 cup chopped walnuts (or nut of your choice)
1/2 cup oats
1 1/4 cup water (or liquid of your choice: milk, cream, etc.)
What you do:
Preheat the oven to 375 degrees. Grease pan, muffin pan, or baking dish with butter or coconut oil. In a large mixing bowl, mix all the wet ingredients, in a smaller bowl add all dry ingredients and sift or still. Then add dry ingredients into large bowl of the wet ingredients and mix well. Then pour the pumpkin mixture into you baking dish and place into oven. Bake for 45 minutes to 1 hour or until done. Cool when done and ENJOY!
