Satisfying Paleo Brownies

Paleo, have you heard of it?

It’s all over the the web, magazines, cookbooks and more. It’s a diet, not like weight watchers or jenny craig but an everyday diet (meaning what you eat) that is becoming very popular. 

I’ve heard it being described as the “caveman” diet and the only foods you should eat are what the hunters and gatherers ate in the Paleolithic era. 

 “A Paleo diet involves eating meat and vegetables, nuts and seeds, little starch, some fruit and no sugar.  It means no grains, legumes, dairy or alcohol.  It means staying away from all processed foods.” – Practical Paleo Living

While I don’t agree with this diet totally, I do think it is very beneficial for your health in some aspects. I was poking around with the idea of making some kind if paleo-inspired dessert and I came up with these satisfying brownies and while they might not be the super-sweet-indulgent-ones, they are good, especially when you are trying to tame your sweet tooth. Check out these special ingredient brownies for another healthier option (not paleo approved) 



What you need: 
3/4 C almond meal/flour
1/2 C unsweetened cocoa powder
1/3 C coconut oil
5 T date sugar
2 T flax meal with 2 T water combined
1 T pure vanilla
dash of salt

What to do:

  1. Preheat oven to 350
  2. Mix all ingredients in a bowl
  3. Pour into a 9×9 pan and spread evenly since the mixture is so thick
  4. Bake for 25-35 minutes or until thoroughly cooked, or to your liking
  5. Enjoy!
*note: these are not that thick, only about a half inch thick and over a period of 3 days, I ate them myself, lol!
