Easy Veggie Breakfast Casserole

One thing I love is a healthy, tasty breakfast casserole.  

I love them because the are really easy. I like to throw a bunch of things together with some eggs and seasonings and call it breakfast- which usually turns into something delicious, like this recipe.

Easy Veggie Breakfast Casserole

Serves: 4-6+
What you need:
  • 7-8 eggs
  • 1 small onion, chopped
  • ½ a medium zucchini, chopped
  • Couple handfuls of sliced cherry tomatoes
  • Couple handfuls of peas
  • ½+ C steamed broccoli, chopped
  • 1 C milk or half and half
  • ¼ t pepper
  • 1 t seasoning like Mrs. Dash
  • 1 t salt
  • ½ t garlic powder
  • ½ t onion powder
  • ½ to 1 C shredded cheese of your choice, depending on how cheesy you like it
What to do:
  1. Gather ingredients, preheat oven to 350 degrees
  2. Prepare all veggies, sprinkle bottom of a glass dish (8x8 or similar)
  3. Make egg mixture with eggs, milk and all the seasonings, mix well
  4. Sprinkle cheese evenly over veggies
  5. Pour egg mixture and let sit for a few minutes or over night
  6. Bake for 45-55 minutes or until lightly golden on the top
  7. Take out of the oven and let cool for about 10+ minutes
  8. Enjoy!
Notes
Feel free to add more or less of the veggies or substitute for the ones you have on hand that you need to use up.

Healthy Breakfast Casserole

I love to make breakfast casseroles when I go to a breakfast meeting for my co-op or MOPS (when I get the chance to go) or sometimes holiday mornings or just for fun. The other day a friend came over and I made one, it was sooo good so I thought I’d share the recipe. 

Breakfast Casserole with lots of Veggies

Feel free to add more or less of the veggies or substitute for the ones you have on hand that you need to use up. I bet veggies like red peppers, spinach or even other squashes would be amazing in this. You can even add some bacon or sausage to add some meat. This recipe is essentially that, a bunch of stuff (whatever you have) with eggs and cheese. Yum!! 🙂

Canvas Craft Idea

With all of these snow days lately, it’s great to have some easy craft ideas to make with your kids. I love doing crafts and so do my kiddos. What kid doesn’t love painting?

If you keep some canvases or even just paint paper, paint, and paint brushes on hand, this is a very simple craft to pull out to make on those “snow days”. And I love these because you can add your favorite bible verse or saying and decorate your home! Or even give as a gifts.

Here’s an EASY Canvas Craft Idea:

Canvas Craft Collage

Gather your supplies:

  • canvas squares or rectangles
  • favorite acrylic paint colors
  • puffy paint
  • paint brushes and/or paint sponges
  • pencil

Steps to make canvas craft:

  1. Gather supplies listed above
  2. Let your kids help paint canvases. Squirt a couple dabs of your acrylic paint and mix colors together. Use sponge circles to make a neat design
  3. Dry Canvases
  4. Write your verse or saying with pencil as a guide
  5. Use puffy paint to trace words, let dry

Hang your canvas craft on the wall or give as a gift. See, it’s almost as easy as One, Two, Three. We actually made these ones for the grandparents this past Christmas, but they would be great for Grandparent’s Day, Mother’s or Father’s Day or Birthdays!

If you are like me, you are one busy mom!

Going here and hurrying there, trying to keep up with the to-do lists and the over abundance of laundry, the dinner planning, homework and the list goes on… and on top of all of that you want to offer your kiddos healthy snacks.

We’ve got fresh fruit and veggies down in our house but sometimes I need something that is all put together and ready to-go for church, going to work or wherever so we’ve been making these healthy snack mixes every few months.

And I know when you are eating real foods, buying pre-packaged snacks can be like a needle-in-the-haystack when it comes to finding something healthy and it can also be hard on your budget, but these are only as expensive as you make them!

What you need:

Anything that your kids might like but here are some ideas:
almonds
walnuts or other nuts
pretzels
yogurt covered pretzels
sunflower seeds or other seeds
raisins
craisins or other dried fruit
a low sugar cereal
crackers, like Annie’s bunnies

dark chocolate chips
fruit chips, like banana chips
popcorn
etc.

What to do:

  1. Gather your specialized variety of food choices along with a few zip bags and a cup
  2. If you have a child ask them to help and decide how many of each choice they will fill into each bag.
  3. Fold bag over cup for easy filling and add the food, we added about 10 pieces of each kind of food.
  4. Zip the bags and store in the pantry or cupboard for easy to-go snacking
  5. Enjoy!
