Chicken Tortilla Soup

What you need:
  • 1 pound boneless chicken breasts
  • 1 can diced tomatoes
  • ½ C chunky salsa
  • 1 C homemade enchilada sauce
  • 1 medium onion, chopped
  • 1 can black beans, drained (optional)
  • 2 cloves garlic, chopped
  • 4 C chicken broth
  • 2 t cumin
  • 1 t chili powder
  • 1 T lemon juice
  • 1 bay leaf
What to do:
  1. Set crockpot to high heat
  2. Add raw chopped chicken into crockpot as well as the chopped onion and broth, stir (you can add whole breasts and shred once fully cooked)
  3. Add remaining ingredients and set crockpot to low heat
  4. Let cook for about 3-4 hours depending on your crockpot
  5. Top soup with sour cream, cilantro and avocado slices
  6. Serve with tortilla chips and Enjoy!

  23. I have a question about salt. My mom has congestive heart disease, so I’m concerned about Anything with salt. So when I see something like salsa, should I make my own, or am I taking things too far? I haven’t yet gotten started, so I’m pre-beginner right now!
