Spring is still a few weeks away but spring fever has already hit at my house. I am ready for blue skies, green grass, colorful flowers, lots of sunshine, and time outdoors.

3 Things To Do When Spring Fever Hits

Here in Florida, we’ve already enjoyed some really nice spring-like days that have me itching to get on with it. I’ve taken long walks in the neighborhood and strolled around my yard making plans.

Whether you’re already getting a taste of spring or it still feels like the dead of winter where you live, here are 3 things to do when spring fever hits.

Freshen Up You Décor

Get ready for spring by freshening up your décor.  If you have some early blooming flowers or flowering plants, cut some and bring them inside for a nice bouquet. If not, head to the store and pick up an inexpensive bouquet of daisies, tulips, or mixed flowers. They’ll add a fun, fresh burst of color to a table, mantel, or window sill.

Shop your house and see if you can swap out pillows, throws, or other décor for those with a more spring-like color scheme. Don’t have anything around the house you can use? Give these No Sew Napkin Pillow Covers a try and freshen up your existing throw pillows.

Plan and Prep Your Garden

Grab a notebook and decide what you’ll be planting this year and make a list of what you’ll need. Get rid of any weeds and start preparing the soil.

Declutter

Get a head start on spring cleaning and begin decluttering now. Grab a box or tub and as you go through your week toss in any items you come across that you know you no longer need or want. Set aside some time each day or each week to go through drawers, closets, cabinets, and the pantry to see what you can toss.

Getting the clutter out of the way will make your spring cleaning tasks go much easier.

If spring fever hits, take advantage of the motivation and get a head start on spring.

Lemon Meringue Pie for Spring

There are several lemon meringue recipes available, but my absolute favorite is the one I am sharing with you today.

Lemon Meringue Pie

There are several lemon meringue recipes available, but my absolute favorite is the one I am sharing with you today.

What You Need
  1. 250 ml measuring cup
  2. 20 ml tablespoon
  3. 9 inch (23 cm) diameter pie dish
For the Pastry
  1. 1 large egg
  2. 120 g cold butter (cut in small pieces)
  3. 70 g (1/2 cup) self-raising flour
  4. 130 g (3/4 cup and 1 tablespoon) plain flour
  5. 30 g (1 tablespoon and 3 teaspoons) caster sugar
For the Filling
  1. 56 g (4 tablespoons and 3 teaspoons) cornflour
  2. 170 g (3/4 cup) golden caster sugar
  3. 180 ml (2/3 cup and 2 teaspoons) fresh lemon juice (approximately 3 lemons)
  4. 230 ml (2/3 cup and 1/4 cup) water
  5. 60 g butter (cut in small pieces)
  6. 3 large egg yolks
For the Meringue
  1. 3 large egg whites
  2. 170g (3/4 cup) golden caster sugar
Instructions
  1. Put the flours, caster sugar and butter in a food processor. Process until the mix resembles fine fresh breadcrumbs. Add egg and process on medium speed for about 20 seconds, until the mix clumps together.
  2. Next, form dough into a flattened round. Put it in a freezer bag (or wrap in plastic wrap). Put it into the fridge and refrigerate it for at least an hour (or overnight).
  3. Combine sugar, cornflour, lemon juice and water in medium saucepan. Use medium-high heat and stir constantly until the mix starts to boil. Reduce heat to low and continue stirring until the mix becomes transparent and smooth. Remove saucepan from heat and stir in both butter and egg yolks. Stir until entire butter has melted and the mix is smooth. Pour filling into a small bowl or container with a cover and put it into the fridge. Keep it in your fridge until it is cold.
  4. Set the oven to 180 degrees Celsius and roll out pastry on a lightly floured board. Put it into pie plate and gently press into dish. Place a sheet of baking paper on the pastry and fill it with pastry weights. Bake at 180 degrees Celsius for 10 minutes. Remove weights with baking paper and continue baking for 10-15 minutes. Let the pastry cool completely.
  5. Preheat oven to 200 degrees Celsius.
  6. Place egg whites in a bowl. Use electric mixer on high speed until at soft peak stage. Start adding the sugar gradually on the same time beating well until the sugar has dissolved and the mix is thick. There shouldn’t be any sugar crystals.
  7. Spoon lemon filling on cooled pastry and spread meringue to cover filling. Form peaks in the meringue with a spoon. Bake it approximately 7-10 minutes.
Notes
  1. Allow the lemon pie to cool to room temperature, cover it and put it to the fridge. Serve it cold for instance with ice cream.
