2 Quick & Easy Dinners

In this world of processed food, frozen meals and a drive thru’s, I am always looking for a quick homemade meal. 

It can get so tempting to “give in” to those kinds of meals I don’t want my family to eat.

So what are we to do?

  • Use Pinterest as a research tool to find some healthy meals! The information is so readily available at your finger tips. 
  • Go to the library to check out some cookbooks
  • Take your favorites and transform them into a healthier version
  • Look up Real Food blogs, they have wonderful recipes
  • Try new recipes out!

Here are 2 quick & easy recipes our family loves!

Broccoli & Spinach Chicken

Ingredients:

  • 1-2 pounds of chicken breasts into strips
  • 4-6 cups of fresh spinach
  • 2-3 cups of broccoli
  • butter
  • 1/3 cup half & half
  • salt & pepper
  • Parmesan cheese
  • water
  • mozzarella cheese

Picture instructions:

What to do:
In a sauce pan, saute spinach with some butter, chop, then set aside. Stream broccoli and add to spinach. Clean out pan and add half & half, 1-2 tablespoons of butter, 4 tablespoons of Parmesan cheese and seasonings and bring to a small boil, then add about 1/4 cup of water and mix until slightly creamy. Add greens & mix then pour into a glass pan. Add raw chicken strip and as much mozzarella as you choose and mix together. Bake at 350 degrees for about 35-45 minutes. Enjoy!

 

Fun Turkey Meatloaf

Ingredients:

  • 1-2 lbs ground turkey
  • 1 egg
  • 2/3 cup oats
  • 1/2 cup tomato sauce
  • bbq sauce
  • seasonings (chili powder, garlic, etc.)
  • ketchup
What to do:
After you mix all ingredients together (except ketchup), scoop out into a muffin pan. Then top with a little bit of ketchup and bake at 450 degress for 20 minutes. Serve with a side. Enjoy!

  3. Rachel – One of our favorite ways to eat healthier and avoid the “junk” is by baking our own treats. Our muffins this week are a case in point: whole wheat mocha nut muffins. Whole wheat, rapadura, and coconut oil each bring a bit of hidden nourishment to my family while providing satisfaction for our sweet tooth.
