It’s been a while since I posted my menu plan on here and to tell the truth I haven’t been planning any. I’ve had somewhat of an idea of what we we’re going to have but nothing for sure. What I have found in the last couple of weeks is that when I’ve failed to plan…. Fun it’s not that fun trying to decided what to eat at 5pm, so I am going to try this planning thing out once again.

I don’t know why I make it so hard on myself! Why do we Moms do that sometimes???? I get a meal plan from e-mealz every week, a program for easy dinner menus for busy & frugal people. I then can take my menu, change as I see needed or just take that menu and go buy the ingredients. I choose the Low-Carb option, but there are several to choose from including: Gluten Free, Low Fat, Portion Control or Vegetarian or just a regular family plan based on your grocery store. SAVE TIME AND MONEY WITH E-MEALZ MEAL PLANS

Here’s my menu for this week:

Monday- Balsamic-Garlic Chicken, Brown Rice, Pesto-Tossed Cauliflower

Meal 1: BALSAMIC-GARLIC CHICKEN, Brown Rice, Pesto -Tossed Cauliflower

What you need:
1.5-2.25 lbs boneless, skinless chicken breasts
(Salt & pepper to taste)
½ c chicken broth
(¼ c balsamic vinegar)
(1 T lemon juice)
3 garlic cloves, minced
(1 ½ t honey)

Box quick cooking brown rice

Frozen cauliflower florets
2 ½ T pesto
(Salt & pepper to taste)

Directions:
Prepare outdoor grill. Season chicken with salt & pepper. Cook chicken on outdoor grill, 6-7 min on each side or until done. Remove chicken; keep warm. In skillet heat chicken broth, vinegar, lemon juice, garlic & honey. Cook 5 min or until slightly thickened. Serve chicken with sauce.
Cook rice according to pkg directions. Cook cauliflower according to pkg directions.Toss with pesto; season with salt & pepper.

Tuesday-Healthy Stoup (i know it’s hot out but this sounds good, made with leftover chicken)
Wednesday- Leftovers
Thursday- Fun Turkey Meatloaf, Paula Dean’s Black-Eyed Pea Salad (made with stevia instead of sugar)

Friday- Baked Potato Bar (make bakers, with toppings, everyone adds what they want, YUMMY!)
