½ pound sliced deli turkey, medium thickness
1 cup Plain Greek Yogurt
2 T homemade or prepared pesto
6 medium whole wheat wraps (tortilla’s)
1 head green leaf lettuce
3 Roma tomatoes, diced
1 cucumber, skin and seeds removed, julienned
12 slices provolone cheese
What to Do:
Combine pesto and yogurt, blend well. Spread 1/6 of pesto mixture evenly across each tortilla. Layer cheese, turkey, lettuce, tomato and cucumbers. Roll tightly starting at the long ends. Cut into 1 inch wheels. Makes about 40+ pinwheels. Enjoy!
Those are so pretty! Great photo Rachel!
Love your photo! I love Costco’s wraps…these are much better for you….will try for sure!
Sounds delicious!
Mmmm…this sounds really good. I’m a huge fan of pesto and stocked my freezer with it this summer when my basil was flourishing. This would be a big party hit, I’m sure! I will be sure and link up with you tomorrow. Thanks for letting me know about it.
I saw in your profile that you live in eastern TN. I used to spend time there every summer when I was in my teens. My family has dreams of settling down there one day. Enjoy that beautiful place!
Pam, I’ll be sure to stock up on the bounty of basil next year! So glad you are linking up at H2W this week! And, yes, we love TN! Maybe we’ll see ya one of these years! 🙂
