Turkey Pesto Pinwheels

The Holiday festivities are here! A couple of weeks ago, I participated in the Natural Holiday Celebration Carnival where I introduced some natural decorating ideas. Now it’s getting close for all of those Christmas parties, work parties, kid’s parties, not to mention that Thanksgiving is this Thursday! So are you prepared???
A lot of the parties we’re invited to are potluck style. I’m always wondering, what am I going to bring?? And I usually wait the the last minute, making it difficult to make something healthy. 
Well, this year when you have a potluck party, why don’t you bring this super easy, quickly made appetizer

What you need:

½ pound sliced deli turkey, medium thickness
1 cup Plain Greek Yogurt
2 T homemade or prepared  pesto
6 medium whole wheat wraps (tortilla’s)
1 head green leaf lettuce
3 Roma tomatoes, diced
1 cucumber, skin and seeds removed, julienned
12 slices provolone cheese

What to Do:
Combine pesto and yogurt, blend well. Spread 1/6 of pesto mixture evenly across each tortilla. Layer cheese, turkey, lettuce, tomato and cucumbers. Roll tightly starting at the long ends. Cut into 1 inch wheels. Makes about 40+ pinwheels. Enjoy!

  4. Mmmm…this sounds really good. I’m a huge fan of pesto and stocked my freezer with it this summer when my basil was flourishing. This would be a big party hit, I’m sure! I will be sure and link up with you tomorrow. Thanks for letting me know about it.

    I saw in your profile that you live in eastern TN. I used to spend time there every summer when I was in my teens. My family has dreams of settling down there one day. Enjoy that beautiful place!
